They are not chopping them up, they are roasting them and just setting them on plates (or if you're walking, wrap them in foil) for the purchaser to gnaw around all the tiny bones. I do not know if they disembowel them or just leave that in there too. In France, they are eating larks, small birds known for their singing. People will eat some pretty strange things; that's just the tip of the iceberg. Granted, I cannot see myself indulging in a bite of Kitty.
